Colocasia Cutlets
Ingredients
- 250gm colocasia(arbi)
- 2 boiled and mashed potatoes
- 1/4 cup rice flour
- 1/4 buckwheat flour
- Chopped green chilies
- Salt to taste
- Red chili powder
- Chaat masala
- 1/2 spoon roasted jeera
- Chopped coriander
- Cook the arbi(colocasia) in a pressure cooker with 1/2 a cup of water for about 4 whistles.
- Simultaneously start prepping with the other ingredients and keep it ready.
- Once the arbi is cooked, leave the pressure cooker to release all the pressure naturally. Then later on drain the liquid and peel off the skin. With the help of the potato masher, mash all the arbi into a paste.
- In a mixing bowl, add all the chopped ingredients, spices, salt to taste, and the mashed arbi mashed boiled potato along with rice flour and buckwheat flour and mix it thoroughly.
- Divide the mixture equally into medium-sized patties.
- Heat a Nonstick flat bottomed pan with little oil to pan-fry the patties. Place the patties and pan-fry them on both sides till they turn golden brown.
- You can relish the Arbi Cutlet (Spiced Colocasia Patties) along with Coriander Peanut Flax Chutney, with vegetable sprout salad and protein corn soup; the perfect platter for your lunch
High protein sweet corn soup
- 1/4 cups boiled sweet corn kernels (makai ke dane)
- 1/4 cup boiled and crushed sweet corn kernels.
- 1 cup finely chopped and boiled mixed vegetables.
- Half cup Small pieces of soya chunks(soaked in water for half an hour)
- Vegetable stock 4 cups
- 4 tbsp cornflour.
- 1 tbsp olive oil
- 1 1/2 tsp finely chopped garlic (lehsun)
- 1 1/2 tsp finely chopped ginger (adrak)
- Salt and to taste.
How to prepare
Step 1
Heat oil in a non-stick pan. Grate cabbage and add to the hot oil. Add carrot and sauté on high heat for 1-2 minutes.
Step 2
Add sweet corn kernels and small soya chunks and mix well. Add 4 cups vegetable stock and mix and allow it to come to a boil.
Step 3
Mix pepper powder in 2 tbsps water and add to the soup along with salt and mix well.
Step 4
Add boiled and crushed corn kernels and allow them to come to a boil again. Mix cornflour in 2 tbsps water and add to the soup and cook till it thickens. Serve the sweet corn soup hot.
