Almond Soup
Almond Soup(Serves Four)
This is an amazing cold soup from Spain but with a twist! Perfect for balancing Vata energies, this is a great soup for the summer season.
If you want to have it cooled or heated gently, that’s fine too 🙂
Ingredients for Soup
- 4 cloves of garlic, peeled
- Pepper
- Salt
- 1 cup of almonds, peeled
- Cup of brown bread crumbs
- 1 tbsp of extra virgin olive oil
- 4 1/4 cup of water
- 3 tablespoonsful of lemon juice
- 1/4 cup of green grapes

Method for Almond Soup
- Crush garlic cloves with pepper and salt.
- Soak the breadcrumbs in water, then drain and add with the almonds to the garlic mixture.
- Continue crushing.
- Gradually pour in the olive oil while crushing and continue until the mixture is fluid and smooth.
- Slowly add the water until the desired density.
- Add lemon and extra salt if necessary.
- Garnish with a swirl of olive oil and a few grapes
