Although chocolate, especially dark, contains a plethora of nutrients, it’s high in calories. If clients want to include chocolate in their diet, they should choose at least 60% to 70% dark chocolate and consume moderate quantities per day to help keep calories and saturated fat in check.

70% cocoa dark chocolate is rich in antioxidants, which have some major anti-inflammatory effects. Flavanols help to reduce inflammation and keep the cells that line the arteries healthy.

The answer is yes. Generally, dark chocolate is the least processed and with the highest levels of flavonoids from the cocoa solids. Dark chocolate usually has a high cocoa percentage ranging from 70 to 99 percent. In cocoa’s natural form (unprocessed) it has a very strong, pungent taste, which comes from the flavanols. However, when cocoa is processed into a variety of chocolate products, it goes through several steps (fermenting, alkalizing, roasting, etc.) to reduce this bitter taste. Therefore, the more chocolate is processed, the more flavanols are lost.
